Bachelorette Chow: Spinach Linguini with Garlic Breads
Ever since a wonderful lady suggested that spinach is still the king of vegetables, and not kale, I've gone back to consuming it as a staple food in my household. Always using my mother's recipe, which consists of sweetening them using onions.
Normally when I get back home from work, I just take the container with my food in it out of the fridge and heat it up. Classic single way of life right? Well, no more. Yesterday I finished work at 8pm and decided to serve myself this dish on a plate. The only thing missing was some scented candle, nonetheless, I thoroughly enjoyed my meal. Here's the recipe :
* Olive oil
* Diced onions
* Baby spinach
* Himalayan salt
* 2 bay leaves
* Linguini pasta (cooked al dente)
* Parmesan cheese (to sprinkle on top)
* Cashew nuts (for that crunchy taste)
It can also be taken to work:
My initial thought was that the cashew nuts and the garlic breads weren't going to be crunchy anymore, when heated in the microwave. Luckily I was wrong ;) Bon appétit!
